A Chef Journey: Sourcing from Organic Farms

November 15, 2025 By Chef Nitesh Sharma

As a chef, I’ve always believed that our most important job isn't just cooking—it's listening. We listen to the ingredients, respect their origins, and honor the people who cultivate them. That philosophy is the heartbeat of my kitchen, and it’s why our routine of sourcing fresh produce and seafood defines everything we do.

The Rhythm of the Harvest: Three Times a Week

In a commercial kitchen, convenience often dictates consistency. Many restaurants rely on massive, centralized distributors where vegetables are picked weeks in advance, gassed to ripen in transit, and stripped of their vibrant vitality. But true flavor cannot be manufactured.

That is why three times a week, like clockwork, our kitchen doors open to a delivery of absolute freshness.

Getting fresh fruits and vegetables three times a week changes everything. It means our menu is never static; it breathes and shifts with the seasons. When the local organic farmers pull up with their trucks, you can smell the earth still clinging to the root vegetables. The heirloom tomatoes are warm from the sun, the leafy greens are crisp enough to snap, and the stone fruits carry a natural sweetness that sugar can never replicate. Working with produce at its absolute peak means we have to do very little to it in terms of manipulation. When nature does 90% of the work, our job as chefs is simply to get out of the way and let the ingredients speak.

From the Ocean to the Block

Of course, a plate is rarely complete without a nod to the waters. Alongside our bi-weekly vegetable influx, our commitment to freshness extends directly to our seafood sourcing. We partner with local fishermen and purveyors who practice responsible, ethical catching methods.

There is an unmistakable difference between fish that has sat in a shipping container for days and fish that was swimming just hours prior. The clarity in the eyes, the firmness of the flesh, the clean, briny aroma of the ocean—it anchors our menu in a true sense of place. Whether it's line-caught catch of the day or sustainably harvested shellfish, treating these proteins with reverence starts with knowing they were sourced with integrity.

The Farm-to-Table Ethos

Building these direct relationships with regional organic farms and independent fishermen isn't just about culinary quality—it's about community and conscience. It’s about supporting soil health, preserving biodiversity, and ensuring that the people who grow, harvest, and catch our food are valued partners in our culinary story.

When you sit down at our table, you aren't just tasting a recipe. You are tasting the morning soil, the coastal breeze, and the dedication of hands that care deeply about the earth. And that, to me, is what cooking has always been about.
